Pikelets and ice cream

Tonight's dessert: Home-made pikelets with rosella jam and golden syrup, and a side of ice cream.
Old family recipe:
1 cup self-raising flour, 1 egg, 1 cup milk, pinch salt. (Double this for a family of 4)
Mix dry ingredients well. (I use an electric food processor.) Add egg, gradually add milk while continuing to mix. Blend thoroughly. Allow to stand for 20 mins if possible.
Spread thin layer of oil over frying pan—spray on, or use a paper towel to just lightly coat pan. Heat to medium-hot. Spoon mixture onto pan, heat on one side until bubbles pop and top surface dries (about a minute). Turn over. Cook for same time on other side.
Suggested toppings: syrup, honey, jam, marmalade, vegemite.
PS… I actually don't use quite this recipe. Since I'm vegan, I use an egg replacer, and soy milk. Oh, and of course the ice cream in the picture is soy ice cream. :-b
