asian peanut noodles

i think this recipe came out of a taste of home magazine. that or a cooking light one.
anyway, it's really good.
here's the recipe:
1 package (8oz) thin rice noodles
1/2 cup prepared peanut sauce* (i made my own. recipe to follow)
1 tbsp rice vinegar
1 tsp low sodium soy sauce
1 tbsp olive oil
1 bag (16oz) frozen asian blend veggies (the kind i bought had seasoning on it, but i rinsed it off)
1/3 cup dry roasted peanuts, chopped
optional - 1 or 2 packages extra firm tofu**
*peanut sauce:
1/4 cup peanut butter
1/4 water
1/4 cup soy sauce
2 tbsp lime juice
2 cloves garlic, minced
2 tbsp rice vinegar
sprinkle of red pepper flakes- optional
heat in small pan over low heat and stir til smooth.
**tofu:
cut in half and then into strips, place on towel. place another towel on top and place a heavy pan or something to help squeeze the water out. do this about 30-45 minutes.
then let it marinate for an hour or so. you can just use your fave marinade.
i just mix up some spicy sauce, soy sauce, lime, garlic, ginger and whatever else i feel like throwing in.
then i fry it in a small amount (1tbsp?) of oil til it gets crisp.
1. soak noodles in hot water for 20 minutes. in small bowl, stir together peanut sauce, vinegar & soy sauce; set aside.
2. heat oil in large skillet over med-high heat. add veggies to pan and cook 5 minutes; stirring occasionally.
3. drain noodles; reduce heat to medium and add noodles to skillet; pour sauce over top and mix together. cook 2 minutes or til heated through. top with chopped peanuts.
yum!
this will feed quite a few people!
asian salad dressing

This Homemade Asian Dressing is a family favorite. Now that our garden is in full gear we are having home grown salads at least once a day. In order to keep things interesting, I've come up with a variety of salad dressings and this one has stuck. I kid you not when I say that the boys fight over the last drops.
