My blogger friend, Maryam, posted the recipe of Murgh Quorma in Hyderabadi style the other day. Only reading through the recipe sounded so yummy that I had to make it. So what other day to do so when 14th August was around the corner :)

It was yummylicious ... a bit different from the way I cook chicken. But very yummy indeed. I don't indulge in Garam Masala (mixture of spices) during cooking. For this I put in some ... and a dash of Kasoori Methi too. The taste was heavenly. Though my dada, being the oh-so-good cook, was like agar yah karleti tu bahtar tha. Haaa. Dads.

I was happy with the outcome BTW =D

Recipe

Ingredients:

Whole Chicken Pieces - 800 gms
Onions (cut in slices)- 7-8 small
Yogurt - 1 1/2 cup (or) 350 gms
Cocoa Powder (optional) - 1 tbs (was in original recipe but I didnt use it)
Chilli Powder - 3 tsps
Ginger Garlic Paste - 1 tbs
Salt - 1 1/2 tsps
Coconut Milk - 1 tbs (was in original recipe but I didnt use it)
Garam Masala - 1 tbs
Lemon Juice - 3 tbs
Water - 2 cups
Kassori meethi - 2 tbs
Oil - 6 tbs



Procedure:

In a pan, add few oil drops, fry onions at medium heat. Add ginger-garlic paste. Add few Tbspoons of water. Saute' them. After that blend them well to a smooth mixture. Add 2 Tbspoons of oil, beat yogurt with all spices added to it and add to the mixture in pan. Let it simmer on slow heat.


Take another pan with oil, add chicken pieces with salt and chilli powder. Add turmeric powder + lemon juice too. Let it cook, till water evaporates :)

Now add this chicken to the onion-yogurt mixture and let it simmer for few minutes. Add some water as per your consistency level :). Bring it to a boil and garnish it with some kasooori methi. I put some when it was simmering too for added flavour. And yeah some Julian ginger. Yummmm!

Serve now plz ... :D

Can someone tell me good health food recipes?

I had a baby 4 months ago, and am really wanting to get into shape. I am 5'5" and currently weigh 150 pounds. Before I was preg I weighed 130 pounds and was pretty confident in my looks. I would like to lose about 20 lbs to return to that. I am very active, but I know I eat awfully. I love italian food- bread, pasta, and cheese. I eat meat but not very much, I love seafood, and things that are easy but still taste good. I need a new diet plan! Any suggestions?

a cook book! you can really find them anywhere. i went to bilo the other day and they and a cook book for a healthy eating for only 4.99. it has cookies and every thing in it. IT ROCKS!!!!!!!

Holistic Cat Food Recipe for Whole Health

‘Holistic' sometimes seems like the current buzz word in the cat food industry, but the term holistic, if used correctly, really relates to feeding the whole cat.  In other words, holistic homemade cat food considers the cat as a whole system.  The ingredients are whole and natural, nothing artificial or chemical is added, and they are geared towards the benefit of the cat.  Homemade cat food cooking is the perfect place for holistic cat food.  All one needs to start is a great holistic low protein cat food recipe.


 


A good holistic cat food recipe is balanced and nutritious but also steers clear of unnecessary additives, colorants, preservatives, etc.  These are not naturally occurring or provide any health benefit for a cat.


 


The following two holistic cat food recipes are adapted from the Halo Pets Website: halopets.com


 


Bijoux's Seafood Gumbo for Cats


1 ½ pounds wild shrimp (fresh, if possible or frozen, never canned)
½ pound celery, coarsely chopped
½ pound sweet potatoes, coarsely chopped
¼ pound yellow squash, coarsely chopped
¼ pound collard greens, chopped
3 ounces canned clams with juice
2 ounces whole oats
1 tablespoon kelp powder
4 to 6 cups spring water


Combine all of the ingredients in a stainless steel pot with enough water to cover. Bring to a boil, then lower the heat and simmer for 30 minutes, or until the sweet potatoes are tender. Remove from the heat and let cool. With an electric hand mixer, or using a food processor and working in batches, blend all the ingredients into a nice puree. Using Ziploc bags or plastic yogurt containers, make up meal-sized portions and freeze whatever you won't use within 2 days.


Makes approximately 20 servings (1/2 cup per serving)


Jack the Cat's Turkey Tetrazzini


1 ¼ pounds ground turkey
½ pound yellow squash or pumpkin, coarsely chopped
½ pound celery, coarsely chopped
¼ pound chicken or turkey liver
1 tablespoon kelp powder
5 to 7 cups spring water


Combine all of the ingredients in a stainless steel pot with enough water to cover. Bring to a boil, then lower the heat and simmer for 30 minutes, or until the vegetables are tender. Remove from the heat and let cool. With an electric hand mixer, or using a food processor and working in batches, blend all the ingredients into a nice puree. Using Ziploc bags or plastic yogurt containers, make up meal-sized portions and freeze whatever you won't use within 3 days.


Makes approximately 20 servings (1/2 cup per serving)


The following holistic cat food recipe is adapted from Dr. Tracy Lord D.V.M and her blog at vetlord.com.  It allows you to mix and match proteins and carbohydrates and add variety.


With this recipe, it needs to be 4 parts protein to 1-2 parts carbohydrates per daily meal.


One part of protein is equal to:


2 ounces meat or fish


1 medium egg


½ cup yogurt (1/2 cup of yogurt also counts as 1 unit of carbohydrate)


1/3 cup cottage cheese (1/2 cup cottage cheese also counts as 1 unit of carbohydrate)


2 ounces of organ meat (can feed up to 1 unit of organ meat several times per week if desired)


 


One part of carbohydrate is equal to:


1 cup of vegetable such as broccoli, brussel sprouts, green beans, peas, cabbage, spinach, or squashes


½ cup of fruit like melons, berries, tomatoes, apples, bananas, and also carrots


¼ cup cooked lentils, chick peas, or beans


1/3 cup of grains like oatmeal or barley, if desired.  If deciding to use grains, limit them to the smallest part of carbohydrate use.


 


Supplements:


½ teaspoon human grade bone meal


Cat multi-vitamin


50-100 mg taurine (if not supplied in the cat multi-vitamin)


500-1,000 mg fish oil


Feline antioxidant


 


Food can be fed raw, finely minced or lightly cooked.  Remember not to feed cooked bones to your cat!


 


Any fine quality, whole foods, homemade cat food can be holistic in nature.  These are just a few of the possibilities for holistic cat food recipes.

Russian Food: How to Make the Perfect Pelmeni

There are many amazing Russian foods, but few are as delicious as pelmeni.  They are a very popular dish throughout Russia and have a long history that can be traced back to their origins in Siberia.  Though they have been called by many names in different cultures, to most Russians they are simply known as a wonderful and spirit warming dish to have on a cool winter day.


History of Pelmeni


The dish "pelmeni" is believed to have originated in Siberia where they were known as "Siberian dumplings," that could be easily made by the hundreds or thousands and then stored over the long winter outside to be used as needed.  They are very close cousins of "pot stickers" that are found in Asia or "pierogies" or any other dumpling that you find in many different cultures around the world.


Later they found their way into Russian culture and soon became a popular dish across the country because they were simple, hearty and delicious.  But to Russians, making pelmeni was just as much fun as eating them!


How to Make Pelmeni


Traditionally, making pelmeni is a very social event that involves the entire family.  Because they are so simple to make, everyone young or old joins in around the table to make this wonderful Russian food.


The basic recipe calls for a simple dough that is made from flour, milk, eggs and salt.  Once the dough is made, it's rolled out on a floured surface until it's very thin and then cut into two inch circles (the size can vary depending on how much filling you want to use).  Then the stuffing can begin!


The filling for pelmeni traditionally calls for a mouth watering combination of minced pork, garlic, salt, onions and pepper.  Other meats can be used but pork is a favorite because it tends to stay moist and juicy, which makes for perfectly delicious pelmeni!


Once the filling is spooned onto the dough, the top edge should be folded over to meet the bottom edge and then pinched together to seal the filling inside.  While these are being made, you should boil a large pot of water.  Once the water reaches the boiling point, add a couple teaspoons of salt, a few bay leaves and then a dozen or two pelmeni (don't crowd the pot too much, otherwise they will take longer to cook!).


Once the filling is completely cooked through, the pelmeni is ready to be served in a bowl with a delicious combination of sour cream, hot mustard, soy sauce and pepper.

Italian Sausage Soup

INGREDIENTS (Nutrition)
1 pound Italian sausage
1 clove garlic, minced
2 (14 ounce) cans beef broth
1 (14.5 ounce) can Italian-style stewed tomatoes
1 cup sliced carrots
1 (14.5 ounce) can great Northern beans, undrained
2 small zucchini, cubed
2 cups spinach - packed, rinsed and torn
1/4 teaspoon ground black pepper
1/4 teaspoon salt


DIRECTIONS
In a stockpot or Dutch oven, brown sausage with garlic. Stir in broth, tomatoes and carrots, and season with salt and pepper. Reduce heat, cover, and simmer 15 minutes.
Stir in beans with liquid and zucchini. Cover, and simmer another 15 minutes, or until zucchini is tender.
Remove from heat, and add spinach. Replace lid allowing the heat from the soup to cook the spinach leaves. Soup is ready to serve after 5 minutes.

try chopping up a few chicken breasts and boiling it in about 1 cup chicken broth and two cups water. add about 2 tbsp of sage and salt and pepper to taste. You could add a little celery salt, too if you want. take a can of biscuits or make some bisquick dough (pkg instructions). Either cut canned biscuits into 4's and drop in boiling chicken or drop in dough 1 tbsp at a time. let boil until dumplings are fluffy in the middle, then serve.
ps- sage is always good in chicken dishes :)

Drunken Noodles is one of my favorite Thai dishes - spicy, noodley and used in Thailand as a tried and true hangover cure, said to sweat it right out of you!

I have never made it myself because, lets face it, Thai cooking is difficult and uses unusual ingredients but I found this and it looks great:

What Most Travel Guides Don't Tell You About South African Food?

The 2010 Football World Cup has just kicked off in South Africa, bringing the world's most watched tournament to Africa for the 1st time ever. For all those lucky enough to be in South Africa watching some of the games or just to absorb the festive atmosphere, there are a few key facts you should know about specific South African food and drink - to experience the country and culture to the full.

While for those enjoying the world cup from their sofas in their home countries, wherever that may be, you may want to impress your friends or possibly South African colleagues with some food facts that most South Africans take for granted. So from the land of long white sandy beaches, wild animals, picturesque landscapes, breathtaking vistas and awe inspiring mountain ranges - here are some foods you definitely should not miss out on.

Biltong: Ask any South African abroad what he misses most and 9 times out of 10, biltong will feature in the top 3 most missed South African treats. Similar to 'beef jerky' in the USA, in that both are cured and dried meat, but the production processes are quite different. Biltong can be made from a variety of meat, including: wild african game, ostrich or more commercially available beef.

Biltong is a long standing Afrikaner tradition evolved from the dried meat carried by the wagon travelling Voortrekkers. The Voortrekkers were early settlers to the Cape Colony who ventured north into the interior of Southern Africa away from British rule during the Great Trek in the early 1800's. With no cold refrigeration and being constantly on the move they dried and cured the meat preserving it from decay and insects.

There are many herb and spice combinations, with each town or city having their own famous biltong supplier. For the best biltong its best to ask the locals or alternatively you can just try them all and decide for yourself.

Rooibos Tea: Grown only in the Cederberg mountains in the semi-desert Western Cape of South Africa, Rooibos (pronounce 'roy-bos' - Afrikaans for 'red bush') - is naturally green but gets its deep red colour and rich flavour from fermentation similar to that of black tea.

Although in 1772 botanist Carl Thunberg was the first Westerner to mention this wild shrub, the indigenous Khoisan were well aware of Rooibos' remarkable health benefits and had been brewing it for centuries. The Cape colony's early Dutch settlers adopted Rooibos instead of expensive black tea from Europe. In 1904 Russian immigrant Benjamin Ginsberg, recognising its potential, became the first to trade it from the Bushmen and pioneered its cultivation. More recently, Rooibos has become famous for being the favourite hot drink of Precious Ramotswe of 'The No.1 Ladies' Detective Agency' novels.

Rooibos tea is full of natural powerful antioxidants and key minerals, and unlike green tea it has no caffeine and is very low in tannins, so all round a very healthy beverage - so much so that it is often bottle fed to babies, which explains why many South Africans are so addicted to it!

In South Africa it is common to drink Rooibos tea with milk, prepared similar to black tea in England, but to fully appreciate the tea it is best drunk black. The tea has a unique taste experience: an inviting vanilla aroma, woody flavours and a sweet, mild, fruity taste.

Rusks: With your cup of Rooibos why not try a rusk. Rusks are hard, dry biscuits (also known as 'beskuit' in Afrikaans) eaten dipped in cup of coffee, tea, or Rooibos. Historically, rusks evolved (along with biltong) during the country's early pioneering days as a way to preserve bread in the dry climate.

Traditionally baked at home using recipes handed down through the generations, the most famous commercially produced rusk brand is Ouma (grandmother in Afrikaans) Rusks. In addition to plain and buttermilk flavours, look out for homemade varieties made with amongst others aniseed, whole-wheat, condensed milk, muesli, and lemon poppy seed. Impress your South African friends; ask for an Ouma rusk with your cup of Rooibos!

Naartjies: Its winter in South Africa and Naartjies (or nartjie) like other citurs fruits are in season. A soft loose-skinned citrus fruit, Naartjies are similar to mandarins, satsumas or tangerines.

The name is Afrikaans and is originally from the Tamil word nartei meaning citrus. The word has been used in South Africa since 1790, but the first written recorded English use is by Lawrence Green in the Tavern of the Seas 1947.

Naartjies are very popular at sporting events and can often find street vendors selling bags of the fruit outside football stadiums. So if you feeling like you missing out on your '5 a day' fruit and vegetables and looking for a healthy snack in between your Castle beer (most popular South African beer) and biltong, get yourself a bag of Naartjies.

Babotie: Babotie is possibly the one truly South African dish that you can't find anywhere else. Like rusks there are numerous varieties and every South African will swear to thier mother or grandmother making the best Babotie using a recipe handed down through the generations. Babotie is a spiced minced meat baked dish with an egg-based topping and includes dried fruit (raisins or sultanas). Served with rice it is normally garnished with walnuts, chutney (ask for 'Mrs Balls Chutney' - the most well known brand) and bananas. Although not noticeably spicy, the dish incorporates a variety of flavours that can add complexity, like for example dried fruit (usually apricots and raisins/sultanas), curry spices and milk.

South Africa has a very rich history and diverse cultural background, evidenced by the now 11 official languages and countless nationalities living in this naturally rich and beautiful country at the tip of Africa. Hopefully you have a few more facts of food info to not only impress your friends with but the truly appreciate and enjoy the country during this the first world cup hosted in Africa.

How does the concept of yin and yang relate to food?

A basic adherence to this philosophy can be found in ANY Chinese dish, from stir-fried beef with broccoli to sweet and sour pork. There is always a balance in color, flavors, and textures.

However, belief in the importance of following the principles of yin and yang in the diet extends further.

Certain foods have yin properties, while others have yang properties - Cooling or warm, fat or non-fat, high-calorie or low- calorie, and etc.

Almost no foodstuff is purely yin or yang - it's more that one characteristic tends to dominate. It also reinforces that it is not so much the individual ingredients, as the the balance and contrast between ingredients in each dish, that is important. Interestingly, cooking methods also have more of a yin or yang property, as the list below demonstrates.

I like cooking with Alia because the videos show you how to make things and I have good luck with her recipes. I would like to try some new recipes - any ideas?
I googled Mortadella and wikipedia says it's a pork sausage. Since I know you don't eat pork, I am assuming it's something like Koutabia sausage? Thanks for the recipe - I will try it.

Many Moroccan foods are my fav :p, but i'm specialist in this one...& here's my special recipe:

BM (bayd & matisha) = eggs & tomatoes.

1 - u put some canned tomatos sauce in the ma9la (with some water)
2 - u add some olive oil, & the spices (salt, cumin, red pepper & hot pepper )
3 - u light the cooker, & leave the magic sauce for fire. (& cover the ma9la with sth)
4 - meanwhile...u break 3 eggs, u twist them.
5 - u cut some Mortadella (optional) into small squares, & add it to the eggs.
6 - u bring some olive (cut into small circles) & add it too.
7 - the sauce (or the "lava") should be ready after 10min, & u add the egg.
- for the safety of your cloths (especially if you're wearing white), lessen the fire before adding the eggs to the "lava".
8 - keep watching, & it should be done in 1 minute. meanwhile, check with a fork to make sure the egg in the core is well cooked.

9 - bring a khobza & bssa7a

@Mimi, yeah, mortadela is supposedly a pork sausage, but in Islamic countries they make it of beef & sheep (it's also called "kasheer" i just didn't know what's the English equivalent for that)

I wouldn't exactly call this a recipe, but it is pretty healthy. Mix up a bunch of your favorite shelled nuts, add some dried cranberries, raisins and blueberries. Dried strawberrie are good too, but not so easy to find.

It sounds gross but the flavors are yummy together. Peel, devein, and butterfly some shrimp (to butterfly take paring knife and slice down the back). Marinate in Italian dressing a few hours. Put them on skewers with chunk pineapple and grill till shrimp turn pink. Serve with your favorite rice. Awesome!

Have you considered going online to buy French food this winter to spice up your traditional festive feasts? If you've not really considered going out to buy French food or gourmet ingredients then the reason may be either because your local supermarket simply doesn't stock such food or ingredients, which is of no surprise, or perhaps you're not too sure which gourmet ingredients you should be looking for, and what you can do with them.


 


In a previous article I suggested one or two things that can be done with goose fat, which is really one of the most incredible ingredients that you can introduce into a whole variety of traditional meals which we all do throughout the winter season. But today I want to introduce another gourmet ingredient which can also be used in a whole heap of feasts in a multitude of ways that can really take an old, slightly dull meal and totally transform it into something which will really get you noticed.


 


When you go to the supermarket to buy mushrooms you generally find that you have two or three varieties. The only particularly clear way of identifying which variety is which is that the button mushrooms are about the size of buttons, and the big mushrooms are, well, bigger. But they all really taste the same don't they? In fact most of the time I use supermarket mushrooms in recipes I can barely taste mushroom at all.


 


That's the problem with using supermarket ingredients, because most of us use the same ingredients in our recipes, completely oblivious to the fact that we are actually well aware that those ingredients made little difference as far as the flavour is concerned, and largely seem to end up only as adding texture. If you head over to France to buy French food or to eat at a French restaurant you will almost certainly notice that the flavours are very much more distinct, rich, and delicious.


 


Often you can tend to assume that it's a gourmet chef who has done something magical and horrendously difficult to the ingredients in order to rustle up something so monumentally fabulous. Rubbish. In most cases the only real difference is that they been able to buy French food. Proper French food, not just the stuff in your supermarket that begins with 'le' or 'la'.


 


You could easily do just the same with your own recipes this winter, and so the gourmet ingredient I would strongly recommend to you today is to buy a jar of dried porcini mushrooms. You don't actually need a great many dried porcini mushrooms because they have a very intense flavour, and used sparingly can be used in a whole variety of recipes.


 


For almost any stock, source or risotto in which you will usually include mushrooms, use dried porcini mushrooms instead and you'll find that the flavour is unbelievable. You'll need to soak the mushrooms in warm water for about half an hour before you need to use them, but here's a good tip: many people just throw the remaining liquid away, but this is an appalling waste. If you're going to use porcini mushrooms in a stock, source or risotto, then after you have finished soaking the mushrooms strain be liquid and add this to the recipe wherever possible in place of water.


 


For some meals such as casseroles, or meals including rice, add the dried porcini mushrooms right at the beginning. Just remember that porcini mushrooms have a very strong flavour, unlike the British mushrooms sold in supermarkets. For this reason it is important to make sure that when you are replacing the cardboard mushrooms from your supermarket with gourmet ingredients such as dried porcini mushrooms from France, reduce the number of mushrooms you use, otherwise the flavour can become overpowering.

1 cauliflower
2 potatoes
2 onions sliced
1 tsp whole cumin
1 tsp coriander powder
4 dried red chilies
2 tbsp garlic-ginger paste
½ tsp chili powder
Salt to taste
1 tsp turmeric
2 fresh green chilies (opt)
2 tbsp chopped cilantro

•    Heat the oil in a large pan. Add the cumin, dried red chilies, stirring to mix.
•    Add the onions and stir occasionally, until golden brown.
•    Add the garlic-ginger paste, chili powder, salt, turmeric and finely chopped green chilies (optional). Stir-fry for 2 minutes.
•    Add the chopped potatoes and cut small florets cauliflower to the mixture, stirring to coat the vegetables in the spice mixture.
•    Reduce the heat, add water. Cover the pan and let simmer for 10-15 minutes.
•    Transfer the vegetables to warmed serving plates and serve immediately.

Great British fry-up - all in the pan apart from the eggs. The Canadian Bacon is cooked already so it only needs warming up.

Haitian Food?

If you could please send me all your haitian recipes I would really appreciate it. Please no websites because I've been to all of them and I have to admit that I'm not really impressed.
For example no one ever talks about using maggi and it is part of most haitian dishes.
I really would like to get "real" , "true" haitian recipes.

Haitian-style Squash Soup

3 pounds beef short ribs, cut into 2-inch lengths
1 lime, sliced
4 (or less) garlic cloves, peeled
2 green onions, including green parts (chop off ends if scraggly), cut into 1-inch pieces
3 to 6 sprigs fresh parsley
1 cube of Knorr Caldo con Sabor de Pollo (chicken bouillon)
1 or 2 tablespoons Maggi seasoning sauce
2 envelopes of Goya Cubitos en Polvo Caldo de Pollo (powdered chicken bouillon)
1 packet of Goya Sazon con culantro y achiote (coriander and annatto)
1 or 2 tablespoons tomato paste
1 or 2 tablespoons butter or margarine

Soup Vegetables
1 large buttercup squash, peeled, seeded and cut into large chunks
4 stalks celery, cut into 1-inch pieces
1 leek, including green parts (chop off ends if scraggly), cut into 1-inch pieces
2 rutabaga, peeled and cut into 3/4 or 1-inch pieces
1 head of cabbage, tough outer leaves removed, roughly chopped
Bouquet of 3 fresh parsley sprigs and 3 fresh thyme sprigs
1/4 cup butter or margarine
1/3 to 1/2 pound rigatoni

In a large mixing bowl or well-scrubbed kitchen sink, place beef and rub generously with lime slices. Cover with nearly boiling hot water and let soak. Meanwhile, in a blender, combine garlic, green onions, parsley, chicken bouillon cube and 1 cup water, process until mixture is smooth and evenly colored.

In a large stockpot or Dutch oven, place (drained) beef and season with Maggi seasoning sauce, Cubitos en Polvo Caldo de Pollo (powdered chicken bouillon) and Sazon con culantro y achiote. Next, add pureed garlic-green onion mixture from the blender, 4 cups water, 1 tablespoon each of tomato paste and butter. Bring mixture to a boil, reduce heat to medium-high and cook for 45 to 60 minutes or until meat is tender, possibly 1 and a half hours.

Meanwhile, in a large stockpot, place buttercup squash and cover with plenty of water (about 2 or 3 inches above squash). Heat pot over medium-high heat and cook until squash is soft, about 30 minutes. Remove from heat and cool slightly. Working in batches, puree squash and pot liquid in a blender or food processor until texture is smooth and creamy. Return pureed squash mixture to a clean pot.

Add beef with pot liquid, celery, leek, rutabaga, cabbage and parsley-thyme bouquet. Bring mixture to an active simmer and cook, covered, for 25 minutes or until vegetables are tender. Add butter and rigatoni and cook, uncovered, until pasta is al dente and soup has thickened. Remove bouquet and discard. Serve immediately.

Makes 10 to 12 servings.
