Question by iWill: Do any of you have some good Liberian or Soul Food recipes?
I know more of the soul food recipes such as collards, fried chicken, and black-eyed peas. Its for a culture project and I was specifically looking for Liberian desserts or even traditional slavery foods.

Here's a recipe I found when I was planning to travel there.

LIBERIAN RICE CAKE

* 1/2 pound butter
* 1 cup sugar
* 4 eggs, beaten
* 2 cups rice flour (* see below for substitute)
* 2 teaspoons cream of tartar
* 1 teaspoon baking soda
* 1 cup milk
* 1/2 teaspoon nutmeg
* 1 teaspoon vanilla extract

Cream the butter and add the sugar gradually. Beat until light and fluffy. Add the eggs and beat well. Preheat oven to 325°. Sift the rice flour, cream of tartar, and baking soda together. Add to the egg mixture alternately with the milk. Beat constantly. Add the nutmeg and vanilla. Beat well. Pour into a 12-inch buttered loaf pan. Bake in a 325° oven for 35 minutes, or until a cake tester comes out clean.

(*In place of rice flour you can use baby rice-cereal which you can get in any supermarket so there are no hard-to-find ingredients.)

We had a Thai potluck yesterday, and I brought (clockwise from top left):
- Sing Buri cashews with lemongrass and chili
- a vegetarian (oh, vegan, actually) version of Kalyn's excellent red cabbage Asian salad - I used red cabbage, red bell pepper, snow peas, and carrots, and garnished with slivered almonds and cilantro
- the fabulous tangy cilantro dressing that goes with the salad above, made with peanut butter, cilantro, ginger, garlic, soy sauce, sesame oil, and lemon juice. If I didn't have to go out in public, I'd just rub it all over my body.

Ooops. Was that too much information?

I didn't get a picture of the pork since it disappeared so quickly!

This recipe is rich, so it needs chilli oil and plenty of pickles and soy sauce (you can cut the soy sauce with rice wine vinegar to reduce the salt level).

a couple weekends ago we bought some eggplants at the farmer's market. i finally got around to cooking them yesterday, but first i had to call my mom to ask for her recipe. she must have done a good job giving me instructions because i think my attempt came out as good (if not better!) than what she's cooked for us at home. i think it was my addition of chili sauce.

ingredients:
2 medium-to-large oriental eggplants, cut into 1/2-inch pieces
1/2 lb. pork
1-2 cloves minced garlic
1 green onion, sliced
vegetable oil
soy sauce
rice wine
sesame oil
chili sauce (optional)

1. marinate the pork in about 2 tbsp each of soy sauce and rice wine, salt, and a tiny bit of sugar.
2. add a bit of vegetable oil to a medium-high pan and saute the garlic until fragrant.
3. add the marinated pork. cook until mostly browned.
4. add another tbsp of soy sauce and let it cook out a bit on the bottom of the pan.
4. add the eggplant and toss around in the pork and soy sauce mixture.
5. cover and cook until the eggplant is tender. depending on how much water/fat is in your eggplant/pork, you may have to add 1-2 tbsps of water or a bit more vegetable oil.
6. about halfway through cooking, add 1 tsp of sesame oil.
7. when the eggplant's done (i like my eggplant pretty mushy because that's how my mom and chinese restaurants cook it), add the green onion and chili sauce. toss to incorporate and cook for one more minute. serve with rice, of course.


Dinner Soup 2-1-07

This didn't really pair with dinner, but I made it because I had the time (and desire). I've been holding on to a butternut squash since last weekend and have been meaning to make soup out of it for my dear ol' wife, who loves butternut squash soup.

This recipe is inspired by the recipe in the 2006 America's Test Kitchen companion.

Quarter one whole squash, scoop out the fibers and the seeds and put them in a bowl.

Sweat about a cup of finely diced onions in half a stick of butter until the onions are translucent. Add the fibers and the seeds to the butter and onions. Let that cook for a few minutes. The butter will take on some of the rich color of the fibers.

Add six cups of water and some salt, put the four squash pieces cut side down on one of those metal basket steamers, and drop it into pot (or dutch oven, which is what I used). Cover and let cook for like, 40 minutes or so.

Remove the squash, scrape out the "meat", strain the solids out of the liquid left in the pot, and puree the cooked squash in a blender, using the leftover liquids to create a smooth consistency (like baby food). Return the pureed squash to the pot (which you've no doubt cleaned and dried by now), add as much liquid as your preference as far as soup consistency goes, add about a half cup of heavy cream, Chinese Five Spice, and a bit of salt. Heat up and serve.

Mine here is served with a little bit of cream, some fresh ground "rainbow" peppercorns, and a sprig of cilantro.

Stuffed, grilled mackerel in banana leaf (or tin foil)

1 big mackerel - cut deep pockets in both sides of the spine

Stuffing:
3 stems lemon grass
3 cloves garlic
inch of fresh ginger
small handful spring onions
small handful deep fried shallots (buy in a packet from chinatown)
pinch pepper
pinch sugar

Lemon sauce:
Juice 1 lemon
1/2 tsp salt
1/2 tsp sugar
1/2 tsp pepper

Crush the lemongrass, garlic and ginger in a pestle and morter. Fry the spring onions in 1 tsp veg oil and 1 tsp butter. Mix with the lemongrass mixture and add the pepper and sugar. Stuff into the mackerel along with a good sprinkle of the deep fried shallots.

Wrap the fish in banana leaves, or tin foil. Cook 10 mins each side over a bbq or under a grill, or bake in the oven 20-30 mins.

Remove skin and bone. Pour lemon sauce over fish and serve with steamed rice and greens.

A nice vegetarian/vegan dish for those cold and short winter/autumn days.
It is very easy to make. You cook everything in one pot. Very quick and simple, no messing!.
It should take around 40 minutes, including preparation and cooking time.

Ingredients for 2
- Green lentils. Half small cup of coffe per person. Green Lentils are available in any Indian or eastern shop :). "Lenteja Pardina" in Spain pardina the best lentil one for this type of dish .
- 1 or 2 potatoes
- 1 dry bay leaf
- 1 Carrot
- 1 Green pepper
- 1 tea spoon of Smoked Spanish Papikra - sweet (Pimenton Dulce)
- Vegetable stock (stock cubes are fine)

Process
- Put some olive oil in pot/pan, heat it up
- Add some crushed garlic and stir (The oil will get the flavor f the garlic)
- Add some sweet Spanish paprika (Pimenton Dulce). Stir for few seconds. 1 tea spoon.
- Add the lentils, stir. Here you need to make sure that the paprika does not burn, or it will get a bitter like flavor. Just add the lentils, stir a couple of times and add the rest
- Quickly add the (whole) carrot, chopped potatoes, chopped peppers and cover it with stock (the water must be cold)
- Add the bay leaf
- Bring it to the boil and then reduce the heat. Let it simmer for 20-30 min (till the potatoes and lentils are soft). It could take a bit more, check every now and then

Some tips:
- The trick is to cut the potatoes small/big enough so the will cook when the lentils are cooked.
- "Quick" to cook lentils will not work as the potato takes also some time to cook
- The carrot is shown on the picture whole, but you could cut it for serving. You should also cook it whole so everything is cooked at the same time.
- Traditionally this dish has also some chorizo, ham or other types of cured meats.

While I was in Spain, I always ate Spanish Tortillas. They were so good and available everywhere. I found a recipe and decided to make it for an appetizer at a BBQ.

2 lbs of mixed potatoes (purple, red and yellow) *
1 large white onion
1/3 cup sliced red bell peppers
olive oil
9 eggs
chopped parsley

Wash and thinly slice the potatoes and start layering them in a bowl.

In a skillet, start frying the potatoes in olive oil until they lighty break under the pressure of the spatula you are using.

Drain the pototoes in another bowl with paper towels to soak the excess oil. Set aside.

Take your eggs and beat them together in a large bowl. Add salt and pepper to taste. Add bell peppers. Set Aside.

Chop up your onions and saute them in what's left of the olive oil in the skillet. If there is loads of oil left, get rid of some of it as you really only need a tablespoon or two. Put in Egg mixture.

Stir your egg mixture and slowly place your fried potatoes in the mixture.

In a 9-inch skillet, over low-medium heat, start placing the potatoes/onions evenly and in layers. (I recommend you coat the pan evenly with a non-stick spray or use the skillet to fry the pototoes or onions-a little bit of oil will be left) The eggs will stick to the potatoes, so you know you will have egg inbetween the layers. Repeat until all the potatoes are in the skillet. Afterwards, you can pour the remaining egg mixture on top.

Then you wait until the sides are golden brown and you will notice that the egg is starting to cook.

Once you think most of the tortilla is cooked, you can try to flip it in the same pan (yeah right) or place it on the bottom rack of your broiler and keep an eye on it (so that it doesn't burn).

Once the tortilla is cooked, place a plate bigger than the skillet upside down and flip the skillet over. Tortilla should easily fall out. Let it cool.

Best served cold.

Spinkle fresh chopped parsley on top. Slice and serve.

This tortilla is cut in cubes for a party, but obviously you can slice it like a cake to serve with a salad for a dinner party or something.

1 package of yakisoba noodles (with yakisoba powder) left over from last week
1 small onion, sliced into rings
1 jar of kimchee, purchased on a whim
oil
frying pan

Brown the onion slices in the oil on medium heat. Cut the larger rings with spatula for easier frying and consumption. Before the onion is completely cooked (meaning, many are brown on the edges and somewhat clear, but a few are not quite soft enough), add five forkfuls of kimchi and a teaspoonful of the kimchi juice. Stirfry that up for a minute, then add the noodles to a nicely-oiled patch of the pan. With spatula, loosen the noodles and stir around until well-oiled, then mixed everything together. After a minute, add the yakisoba spices to taste.

(Be careful: the yakisoba flavoring is somewhat sweet, and the kimchee tastes of vinegar and pepper. I think next time I'll add less yakisoba flavoring and more kimchi.)

Stir and stir until the noodles are evenly brown. Dump onto a plate. Top with two small forkfuls of kimchee. Serve hot in an air-conditioned one-room apartment on the hardwood floor. Recommended drink: LoveBody, a name of a Japanese tea, light as water but still complementing just about anything you can make in Japan. Eat all of it, even though it's enough for two people. Blog about your original recipe. Repeat the following night.

Almond milk is one of my favorite drinks. Rich and creamy, it’s easy to make and super nourishing. While almond milk is a good alternative beverage for those on a dairy-free kick or raw food plan, I think it’s just plain delicious, whatever your dietary predilection! My children drink it by the glassful, while I drink it in my tea and blend it up in smoothies.

I used my favorite nine-year-old hand model to take the pictures above and while he’s been a bit of a wild stallion of late, I have to say he was a model passenger for the almond milk photo shoot. Got milk? Yes, we do! He gulped this cupful down as soon as we were finished photographing.

Rose Wine Tinted Beet Mix Recipe

Ingredients:
-Beetroots(I used pre-boiled refrigerated ones, but canned shout also work. If using fresh ones, boil them before adding to the recipe)
-Bean Sprouts
-Slices of raw chicken thigh
-Rose wine
-Mushrooms
-Bay Leaf (optional)

Directions:
Soak the chicken in the wine for at least ten minutes. While waiting, dump the mushrooms whole in a pan with just enough water to cover the bottom and let them steam, along with the bay leaf. After 10minutes have passed, add the chicken to the mushrooms. Once the chicken is mostly cooked, add the bean sprouts and sliced beetroot pieces. The meal is ready once most of the liquid has boiled away or the bean sprouts have wilted. If the bean sprouts haven't wilted by the time all the liquid is gone, add a tiny bit more to the mixture until this happens.

I loved how the beets gave the food a natural pink tinge! ^_^

Most home cooks at some time or another find themselves getting interested in ethnic cuisine. The impetus might come from their heritage ... maybe grandma was a German immigrant or grandpa came from Vietnam. Or it could just be simple cook's curiosity. All of us get tired of cooking the same old recipes over and over, and decide to move beyond, frequently into ethnic food recipes.


However, and this is especially important if you don't already know anything about the particular cuisine you're after, it can be hard to figure out if the recipes you're cooking are authentic, or are even worth trying. You might pick an Asian recipe that sends you out hunting exotic ingredients for three days only to find that either the recipe was written poorly or the flavor is something you just can't stomach.


Unless you want to sink a lot of money into cookbooks, your best source of recipe information is going to be the Internet. However, searching for Internet recipes can be fraught with peril. How do you know this recipe will work? Do you have any clue what it tastes like? Do you maybe have a picture of what the finished dish should look like?


This is where sites that allow user reviews of recipes are invaluable. We foodies are a verbose bunch, forever ready to share good recipes and tips and warn others away from the bad ones. On sites such as Allrecipes or Cooks.com, you'll find ethnic food recipes with hundreds of reviews from users. Often, these reviews will include possible ingredient substitutions, problems inherent in the preparation and possible solutions and all sorts of other great information. It's very similar to having a kitchen full of cooks ready to teach and advise you at all times.


While you might not want to trust just one or two reviews, you can feel fairly safe when you see certain ethnic food recipes have been cooked successfully by dozens of people. Pick the recipe, read the comments and forge ahead!

Since the fatback is optional, if you are not using it, simply heat the oil and proceed to step 3. 2 - Simmer the fatback for 2 -3 minutes until you see it getting golden colored. 3 - Add the chopped onion, and simmer approximately 1 - 2 minutes, until onion is translucent. 4 - Add the sofrito. 5 - Simmer until the sofrito starts to thicken - this could take up to 3 to 10 minutes, depending upon the heat of the stove, and whether your sofrito is at room temperature, or still slightly frozen. Notice the simmering action in the video, and adjust your heat accordingly. 6 - Add the rest of the ingredients, starting with the water. 7 - Let everything come up to a simmer. You may increase the heat to Medium-HI. 8 - Once simmering, stir once, while scraping the rice on the bottom of the pot (to prevent sticking). 9 - Allow the liquid in the pot to evaporate- notice the section ...

Steak Tartar with local Herbs and Sweet Mustard When making steak tartar, make sure to buy fresh meat, and chop or scrape it your self. I prefer chopping the meat, as that gives the dish some more structure. Serves 4 1 ½ pounds (700 g) beef sirloin 4 tablespoons finely grated celeriac 1 medium stalk celery, finely chopped 1 teaspoon black pepper corns, coarsely grounded 1 teaspoon coriander seeds, coarsely grounded 1 tablespoon finely chopped sorrel (alternatively: rocket salad) 1 tablespoon finely chopped fresh oregano 1 tablespoon sweet Swedish-style mustard A pinch of salt 4 medium egg yolks Finely chop the meat. Transfer to a medium bowl, and add celeriac, celery, sorrel oregano, mustard and salt. Ground the pepper and coriander in a pestle and mortar, and add to the mixture. Mix until smooth, and thoroughly blended. Place the meat on a cutting board, and divide in four equal pieces. Shape nicely, transfer to serving plate, and top with egg yolk. (You may need to remove the ox tale while searing the diced meat, as the meat will give away a lot of moisture, boiling rather than searing it. Return the ox tale when the meat is thoroughly seared.) Looking at this, it has to be one of the worst picture I've taken. But this was such good food. We've been watching Ching-He on BBC2 lately, in her "Chinese Food Made Easy" show. This is worth note alone, given the amount of TV we watch, or don't as the case may be. So Pixie decided to make a Stir Fry. She hardly even let me "help" she was so inspired! Anyway, it was so, so good. We did our rice like this and the cashew and toasted sesame worked so well together.

I really should have gotten my speedlight out to photograph as this picture, to me, just looks like a pile of brown mush but the food was so very much better than any chinese I've ever had before it deserves better. But I didn't want it to get cold so I left he speedlight in my bag. Silly me!

Chocolate is supposed to be the food of the Gods and it comes in various shapes and forms among which is the chocolate cake. The chocolate cake recipe is one of the most popular food recipes and is included in all occasions be it for New year, Christmas, birthdays, anniversaries, christening parties or Thanksgiving. No occasion would be complete without a chocolate cake recipe.

I’ve been feeding my cats the raw meat, Feline Future diet for almost 12 years. Here is the recipe, and a step-by-step walk through, for anyone wanting to switch their cats to a safe diet. You can also buy the pre-mixed supplements from www.felinefuture.com.

I've included some notes on how I vary my cats' diet, and some helpful links at the end of the photoessay.


Raw meat diet for cats

2 ¾ cup (1 ½ lb) raw, ground, muscle meat (3-20% fat by mass) (do not mix meats, organs, from different animals)

¾ cup (½ lb) raw, ground heart

½ cup (3 ½ oz.) raw, ground liver

NOTE: I also add kidney, which I or my butcher cleans

1 cup (8 oz.) filtered spring water

2 raw egg yolks

2 Tbsp bone meal powder

1 Tbsp Gelatin

2 tsp. Psyllium Husks (as is or powdered)

1 tsp Salmon oil (3 capsules)

300 IU Vitamin E (1 capsule)

1 capsule 50mg Vitamin B Complex

Important Note: Be absolutely sure to follow the recipe’s indicated quantity of water in ratio to the psyllium husks/psyllium husk powder. Psyllium husks can lead to constipation if not combined and ingested with sufficient water!

1. All meat ingredients should be from the same species of animal. Measure your meat ingredients. Grind the muscle meat, heart, kidney and liver using a coarse plate, or chop by hand. Combine the meats mixing gently, but thoroughly. Return to the refrigerator.

2. Into a separate bowl add 1 cup water. Whisk all your other ingredients, other than meat, into the water, finishing with psyllium husks and gelatin, as these easily congeal and might otherwise form clumps. Within a few minutes the ingredients and water will turn into a semi-gelatinous texture.

3. Add your meats to the gelatinous supplement blend. Mix thoroughly but gently. Violent stirring will cause the meat to become “stringy” Package immediately. Portion as single or double meals into small plastic containers. Small freezer bags are somewhat inconvenient when thawing the food.
