...apparently, it's Arabic for "red stuff". There are lots of versions of this dip, but here's the recipe I used (a combination of Jenny's and Claudia Roden's).

100g walnuts
2 red capsicum (roasted and peeled)
1 large, stale pita bread (torn up)
1 tablespoon pomegranate molasses
1/2 teaspoon cumin
1/4 teaspoon cayenne
pinch salt
slurp of olive oil

Zoosh (it's a techical term) in the food processor until smooth.
Serve as part of a meze with plenty of pita bread.
